The advent of warmer weather means more time spent outdoors and less time heating the oven. We tend to appreciate those hearty salads that satisfy our desire for a healthy meal without spending huge amounts of preparation time. We would rather spend our time enjoying the activities that make the longer days of summer enjoyable.
Cold Cabbage and Ramen Salad with Strawberry Vinegar Dressing
Our teenagers like this recipe since it is crunchy but light and they can put it together while texting all their friends. There always seems to be a crowd enjoying this meal!!!
SALAD
DRESSING
4 chicken breasts, boiled, cut into bite-sized pieces *
1 head cabbage, chopped
4 green onions, sliced
1 small red bell pepper, chopped
1/4 cup sunflower seeds
2 pkg. Ramen noodles, uncooked, broken
Salt, pepper to taste
2 pkg. Ramen noodle seasoning mix
3/4 cup light olive
Combine all the salad ingredients except noodles. Whisk the dressing until it is well blended. Pour over the cabbage mixture and toss. Chill at least an hour. Add the noodles and toss again right before serving. Serve with crusty French bread for a light summer meal.
* You can always bring home a roasted chicken from the supermarket deli and use the meat from that if you prefer.
