March madness at our house means getting ready for that final school semester, baseball practice and tuning up the gas grill for outdoor dining delights.

As the days get longer, this family seems to get busier but our best times are always the time we spend at the dinner table talking about the events of the day, politics, dates for Saturday night or the latest movie. Regardless the topic, time spent together talking adds an interesting dynamic to dinnertime. Our pepper pastes add an interesting flavor dimension to our dinnertime as well.

Mix our Aji Amarillo Pepper Sauce with shredded mozzarella or white Mexican cheese and use as a topping for baked potatoes or salmon croquettes.

The rocoto pepper is a small, red, hot pepper that is grown in Peru. Our Rocoto Pepper Paste uses that pepper with other ingredients to make a delicious kitchen staple. Coat a beef roast with a thin layer of the Rocoto Pepper Paste and high heat (450 deg.) roast for approximately 30 minutes to form a crust. Turn the heat down to 325 degrees and slow roast until the internal temperature is 160 degrees (approximately 2 - 2 ½ hrs). Let the roast rest for 10 minutes before slicing very thin. Serve with garlicky mashed potatoes and green beans.

The Super Picante Paste , also from the rocoto pepper, is VERY hot so a little goes a long way. Add it to vegetable soup or chili for some extra heat. Mix it with fresh ground organic peanut butter for a hot Thai-style dipping sauce.
